Looking after it

A Japanese blade rewards ten seconds of care. Here is all it asks.

  • Hand wash, never the dishwasherDishwasher salt and heat dull the edge and attack high-carbon steel. Warm water, a little soap, done in ten seconds.
  • Dry it straight awayAUS-10 is stainless and resists rust well, but even stainless steel can spot when it is left wet on the draining board.
  • Use a wooden or plastic boardGlass, stone and steel boards ruin an edge faster than any amount of cutting.
  • Hone now and thenA few strokes on a honing rod keeps the edge straight. Sharpening itself is rarely needed in the first year.

Japanese AUS-10

  • Handmade and forged from AUS-10, a premium Japanese high-carbon steel.

Questions people ask

Is it sharp when it arrives?

Yes. Every knife is sharpened and hand-finished before it is packed, so it cuts properly from the first time you use it.

Can it go in the dishwasher?

No. AUS-10 is high-carbon steel: dishwasher heat and salt dull the edge and can cause spotting. Hand wash and dry it — it takes seconds.

How long will it last?

A lifetime, if you look after it: hand wash it, dry it straight away and hone it now and then. Something wrong with the knife itself? Mail sales@onicraft.online and I will sort it out.

How long does delivery take?

Shipping is free, with track & trace. Most knives arrive in the Netherlands in 2-4 working days (elsewhere in Europe 6-10). Some take 11-22 days: the product page shows the delivery time for each knife.

Can I send it back?

Yes, within 14 days, as long as it's unused: as it came out of the box and in its packaging. Shipping & returns explains how it works.
